We make this from top-quality Riesling fruit grown at Kick-On vineyard. Fermented to a point where the slight sweetness is balanced perfectly with the crisp acidity.  After the fermentation is complete, we aged the wine a wee bit (15%) in neutral French oak barrels in our cold room.
