This is my fifth vintage from Purisima Mountain. I produce a mere five barrels (one of which is in the M5 blend) of this wine although Steve Beckmen has promised me a bit more for vintage 2006. It is by far the most elegant and reserved wine that I make. We did a vertical this August of 2001 thru 2004 and the consistency is remarkable. The wine practically makes itself. I crush the fruit early in the morning and immediately inoculate with Rhone isolated yeast and commence fermentation in my ¾ ton open top fermenters in my cold (55 degrees) room. Punching down three times a day it is a fairly long and very cool fermentation. I press the wine slightly sweet and settled the gross lees, inoculate for ML and then barrel down. I rack on reduction and for this wine I only racked it once but it never actually reduced like many of the other Syrah vineyards I work with. Vintage 2005 produced very flavorful fruit even before the grapes were technically ripe and this years Purisima is leaner and lighter than years past. Always the classiest, the 2005 should bode well for cellar time and, as always, these wines are made for the table and fine dining. The wine is aged in 100% new François Frères barrels.
