This young lady will be a superstar wine maker.  She is all about natural wine-making using native yeasts and minimal to no sulfur.  The domain has 4 hectares and is situated in Cote du Beaune.  Fanny makes the wine in the middle of Beaune surrounded by the walls of the old city.  She works her own vines in the purest respect of the soil, plowings, enherbement, with tiny yields, ébourgeonnage, does a green drop and harvests manually all in softness without pressing at all.  Entire clusters are deposited soaking semi-carbonic and piégeages is done by young (I assume naked) Fanny herself.  She alone does the bétonnage; there is no soutirage at all prior to bottling.
